Few things helped to beat the summer heat when we were kids than slices of delicious watermelon. The summer heat and humidity seems relentless this year, so we thought it would be a great idea to pick up some watermelon. As we returned to Madtini headquarters we began thinking about what kind of cocktails we could make using watermelon, and the search was on.
We found this great recipe by Donna Diegel from Providence, R.I. on examiner.com. While the preparation seemed a bit daunting at first, our intoxicology crew sprang into action cutting up watermelon to get this drink started. After a few minutes of blending, straining, mixing we had a table full of these tasty and refreshing drinks.
Ingredients (makes 4-6-ish)
- 1 1/2 cups of gin
- 2 cups strained watermelon juice
- 10 mint leaves, chopped fine
- 1 cups simple syrup
- Juice of 1 lemon
- Fresh mint sprigs for garnish
- Club soda
Preparation
Cut up 1/2 small seedless watermelon (removing rind). Drop into a blender with the simple syrup and 10 chopped up mint leaves. Blend, then strain through two sheets of paper towel places in the bottom of a colander. Squeeze the paper towel to get the rest of the juice through. Add the juice of one lemon and chill in the freezer until its cold.
Serve over ice with chilled gin, add club soda and garnish with a sprig or mint and a wedge of watermelon.
